Bacon Wrapped Sea Scallops

Recipe Revisit from Tuesday, September 11, 2012

These were so easy and delicious. Everyone loved them! I highly recommend them. When Ger came in from the box, he said, "Oh my the house smells good...." and he wanted to eat Isaac's scallops since Isaac was asleep!

I took a 2 lb package of sea scallops and a package of uncured bacon. I took the kitchen scissors and cut the bacon in half, giving me twice as many pieces that were twice as short.

I wrapped a piece of bacon around each scallop and secured it with a toothpick.  The bacon looks like it won't go around the big scallops but it will stretch. I poked the toothpick through where the bacon overlapped and out the other side.

I placed them on a big cookie sheet. The number of scallops and bacon pieces came out a little wrong, so I cut two of the biggest scallops in half and put the last of the bacon around them! (make it work)

I sprinkled them with smoked Garlic Gold nuggets, sea salt and freshly ground pepper.

I broiled them in the oven for about 14 minutes. I didn't bother turning them over half-way through the time, like I thought I would need to do. They were just fine. Keep an eye on yours.

I served them with field greens, guacamole, broccoli, and fresh lemon juice squeezed over the top. WOW!
