Chicken Goji Pear Salad

Thanks to Kayla for this photo when she made a Feeding Ger Sasser paleo chicken recipe.


Ger loves these big salads with strawberries but I couldn't find organic strawberries, (Strawberries soak up the pesticides like little sponges) so I came up with this sweet and healthy alternative. This made 3 HUGE salads.

4 eggs, boiled and chopped
2 packages chicken tenderloins, cooked in coconut oil and chopped
1 green pepper, chopped
2 pears, chopped
1 package baby spinach
1/3 cup goji berries, soaked in hot water for 15 minutes, then drained
Dried basil, sea salt, and freshly ground black pepper, to taste

We dressed these beautiful salads with macadamia oil and balsamic vinegar.




The goji berries were plumped up, sweet, and full of good health. I saved the hot water they had soaked in and used it in a cup of green ginger tea. It went well with this salad.

Eat real foods, even if you have a cheat meal.
