Paleo Lemon Basil Steamed Salmon


Wow, this salmon turned out perfect for Tuesday night Family Dinner. I had 5 pounds of it  - I wanted to make sure that everyone had PLENTY.  GRID athletes and Crossfit athletes can have BIG appetites, right? The recipe is written for one slab of salmon but you can easily cook two at once, like I did, if you need to. It's easy and fool-proof. Just prep it and forget about it while it steams in your oven for an hour.

I moved an oven rack to the bottom of my oven and placed a glass baking dish filled half-way with water on the bottom rack.

I heated the oven to 225 degrees. (slow, moist heat, right????)

I covered a huge baking sheet with foil and rubbed coconut oil on it. Then I placed the big slab of salmon on there, skin-side down.

I brushed it with 2 TBSP  Garlic Gold, a garlic-infused olive oil with minced garlic nuggets in it. (If you don't have that, you can brush it with olive oil or coconut oil, and sprinkle it with minced garlic.)

I added:
smoked sea salt
 freshly ground black pepper
2 TBSP chopped fresh basil
1 sliced lemon. I lay the slices on the salmon and squeezed the juice from the end pieces.

I put it in the oven for one hour.

It was perfect. 7 people said so.
