Paleo Shiitake Mushrooms

Shiitake mushrooms are a great way to fuel your WODs.
This was a great side dish tonight along with grass-fed T-bone steaks.

The first thing I did was dice 2 sweet peppers, one red and one green.
  I put 2 pats of KerryGold Pasture butter in a big skillet.
 I added 1/4 cup of basic chicken stock. I turned the skillet on to medium.
I added the diced peppers and 3 8 oz. containers of sliced organic shiitake mushrooms.
 I stirred often and put a lid on it for about 10 minutes.
Then I added 3 TBSP pine nuts and cooked on low another 3 minutes.
That's it.

( Update - 3 years later and I still make this side dish. Do you know how good those mushrooms are for you? Shiitakes are known for health benefits, cancer prevention, cholesterol reduction, and a host of other things you can Google.  Eat lots of different kinds of mushrooms. Try different ones in different ways until you find some you like. Your health and strength will thank you!)
