Crock Pot Round Steak and Quinoa


(Update:  Here we are at season three GRID playoffs - time flies. Gerald Sasser and the San Francisco Fire play the LA Reign tonight. Jack and I will be watching from St Thomas.)

This new recipe was a BIG hit at Thursday's family dinner night. It's so good that it's going to be the first thing I make when Ger comes home after the season two GRID playoffs. (The San Francisco Fire will be facing the Phoenix Rise Sept 16) Anyway, the rest of us loved this meal. You've got to try it!

I put the following ingredients into the crock pot, just layering things up:


1 TBSP coconut oil
2 1/2 lbs round steak
1 tsp wood smoked sea salt
1/2 tsp smoked paprika
1/2 tsp chipotle chili powder
1/2 tsp basil
1 TBSP Garlic Gold Nuggets (or 1/2 tsp garlic powder)
freshly ground black pepper

1 8 oz container fresh Diced Pepper Blend (or slice and dice 8 oz of your own red, yellow, and green peppers)
1  6 oz can organic tomato paste
2 TBSP balsamic vinegar
2 TBSP honey
1/4 cup water

I put the lid on and cooked it on LOW for 8 hours.
The LAST HALF-HOUR I added 1 cup red quinoa ( or your favorite quinoa) and stirred everything together, breaking up the tender round steak with two forks. I put the lid back on and worked on a vegetable skillet side dish.
(If you are at work and this recipe has been in the crock pot longer, that's ok. If it's on WARM, just set it for a HALF-HOUR on LOW when you get home and add the quinoa then. It will be perfect.)
