I took a package of the nitrite-free apple chicken sausage, peeled the casings off, and sliced them.
I put them into a big skillet along with:
1 TBSP coconut oil
1/4 cup bone broth (or chicken stock)
2 organic green peppers, diced
3 zucchini, sliced
1/2 tsp smoked sea salt
1/4 tsp turmeric
1/4 tsp smoked paprika
1/4 tsp basil
freshly ground black pepper, to taste
I sautéd, stirring often until the vegetables were crisp-tender.
This is a fast and delicious skillet meal. It works perfectly when you are doing a meal prep session, and does well in containers up to 5 days.
It's also easy to change up the vegetables in this recipe or add leftover vegetables that you may have on hand.
