Bacon Wrapped Corn on the Cob


I shucked 5 fresh ears of corn on the cob and pulled off the silk.

I went all around each ear of corn with Kerry Gold grass fed butter, rubbing a light coating of butter into the corn.

I wrapped each ear of corn with 2 pieces of uncured bacon and laid them in a 9 x 12 baking pan.

I sprinkled them with smoked sea salt and freshly ground black pepper.

I covered the dish with tin foil to create a seal.

I baked them in a 350 degree oven for one hour, then took off the tin foil and put them back in for 15-20 minutes more so that the bacon got crispier.

(If you have someone with braces, like I do, just cut it off the cob with a sharp knife and then scrape the cob with the knife to get all the sweetness out)
