Gluten Free Cheddar Cornbread


You all know I'm putting most of my new recipes on feedinggersasser.com but whenever I use one of my recipes from the 500+ recipes on here, I kept seeing the photo of the eggs. Got tired of seeing that, so I just needed a change! (also, big day at school today and woke up earlier than the alarm clock's 5:30am)
At a recent Family Night Dinner, (I love to cook for 7 on Tuesday nights!) I made this cornbread and wanted to share because it's so easy and delicious and when I talked to some friends about it, they'd never done this.

To make the easiest gluten free cheddar cornbread, buy a good mix, then LAYER IT UP.
I don't make cornbread very often but now and then, it's just so perfect with a great soup or stew!

Now and then I buy a gluten free cornbread mix from kingarthurflour.com or pick up one in the grocery from Krusteaz.

I make the cornbread mix according to directions.
I rub my dish with coconut oil.
I spread out half of the batter in the prepared pan.
Next, I layer in 1/2 cup organic white corn and 1 cup shredded cheddar cheese.
Then, I put the second half of the batter on the top and then cook according to the package directions, or maybe 3-5 minutes more.

It's delicious and looks great when cut into big chunks that just cry out for some KerryGold butter on the top. Some people around here even crumble this cornbread into the bowl before they add their soup or stew.

I've also recently made a batch of this with the middle layer consisting of:

1 small container of green chilis and 1 cup shredded colby jack cheese.

Both have their favorites in this house!

Broccoli and Eggs in Cast Iron


Hi, guys. When I had a week of snow days I made eggs every morning, all different ways. This one was a delicious and easy way to get fueled up for a great day of checking things off the to-do list. 

In a small cast iron skillet, I put 1 tsp of coconut oil and rolled it around to coat the bottom evenly. (I think my kitchen is a bit crooked, or maybe it's my stove?)

I broke three eggs into the skillet and barely broke the yellows. I added a handful of organic broccoli, cut into very small pieces, hickory smoked sea salt, mustard, smoked paprika, and freshly ground black pepper.

As the eggs, over medium low heat, began to cook along the edges, I would pull them up with the spatula and tilt the pan, so that the whites would move under there.

Next, I cut down the center of the eggs with the spatula and flipped over both pieces. 

Then, I turned off the stove and moved the little cast iron skillet off the heat, and slid the eggs onto a plate. 

Ah, so good with coffee!

Ger and Cassie are expecting a baby in July, 2016


Yes, it's true - a baby is on the way. Ger and Cassie are getting Mikko a human. Won't it be strong and beautiful and smart? Well, the odds are good on that. So, since I'm a left handed gal in cast since Sept 24, I haven't been posting much on here. I hope to get this waterproof cast off on Nov 10 if the X rays look good. Then I'll get a brace and start working on the wrist rehab. (been working the thumb already)

Needless to say, eating has been a challenge - I can't cook with just my non dominant hand, I can hardly get food INTO my mouth with my right hand...and what else? I bought a new dishwasher and it's sat in my kitchen floor for an entire week now. (If anyone out there is trying to think of a job that is needed, this might be a great idea...) 

But, tonight Jack, Isaac, I am going to Ger and Cassie's house. They made chili. Jess is bringing grilled cheese sandwiches. How nice is that? I'm looking forward to it.

Don't you love the shirts in the photo? Kim saw them and just had to get them for Ger and Cassie. The SASS is STRONG with them, for sure! I can't wait to see them in these matching shirts.

Paleo Chicken Pepper Paprikash has the power of smoked paprika.





Chicken Paprikash is a traditional Hungarian dish that uses Paprika as a main ingredient in the cooking of chicken thighs until extremely tender and flavorful.  I took the old family recipe and changed it up, using Paleo ingredients and Smoked Paprika and everything compliments the other ingredients to the point of perfection.

Smoked paprika has a deeper color and a more intense flavor than normal paprika.  it's filled with vitamin C and carotenoids and we all know the long list of benefits to our health that come with that, right?

Bacon Wrapped Corn on the Cob - Oven Version


We were all craving corn and hadn't had any yet this season. I wanted to find the healthiest corn possible in this area; not an easy task, but farmer's markets and the Wild Ramp would be the best bets. Since we try to eat Paleo most of the time, and healthy all the time, I wanted this corn to be as special as I could make it so, of course, I wrapped it in bacon. Lots of bacon. Because that stuff will shrink.

Crock Pot Round Steak and Quinoa fuels you up for success


This amazing round steak recipe gives you the most delicious and tender way to easily prepare round steak. It can be made strict Paleo if you leave out the quinoa. 

But, let's talk about quinoa. It's not a grain. It's a seed, technically, from the goosefoot plant. 
So, it is gluten-free and better for you than grains. Most people process quinoa effectively. It's not like we eat it often, but now and then we enjoy it. There's only a cup of red quinoa in this crock pot recipe and it's a wonderful addition to your paleo diet now and then unless you are a STRICT Paleo person.

I like to load my crock pot the night before and place the insert into the fridge.
 The next morning, I'll see the post-it note on the coffee pot that reminds me to take it out of the fridge and plug it in and set it.  It is the perfect way to have a great meal ready when I get home from work, and no matter how stressful the day might try to be, I know I'm going to fuel up my people with a healthy dinner.

Spaghetti Squash Baby Kale Chicken Marinara - yes, I'm working at the airport.


I'm sitting in the Oakland airport waiting to fly home and catching up on recipe posts. We've had such a great time and got to spend a lot of time with Ger! It was great that Cassie was here at the same time, too! The San Francisco Fire won their match against the LA Reign and move on to the playoffs on Sept 16. Ger and the Fire will play the Phoenix Rise again in Anaheim.

We especially enjoyed our dinner last night at the Walnut Creek Yacht Club. It's nowhere near water but the food was so perfect that it didn't matter at all. I had tender sea bass, Jack and Ger had the halibut and roasted beets, and Isaac had lobster mac n cheese. All of this was after oysters on the half-shell. We finished up with one creme brûlée for the 4 of us to share.

Banana Pecan Breakfast Bars are grain-free Paleo deliciousness.


I am sitting here at the Treehouse in Sunol and I finally have time to blog this recipe. It's so beautiful here. I'm in the Redwood cabin section of the house, all cozy, and the views out all the windows are relaxing and green. The weather is perfect. If you even get a chance to be out this way, this place is a great rental. Richard seems to have thought of everything you could possibly need for a perfect stay.

 AND the San Francisco Fire won their match yesterday against the LA Reign. We love watching our team live and yesterday was no exception! The Fire brought the win with finesse and strength and the crowd was #FiredUp!

What else is great? Ger and Cassie will be texting soon about when they can get together with me, Isaac, and Jack. Who knows what we'll do today? We've ridden the bart to a Giants game, eaten sushi,  eaten a fabulous breakfast at Denica's (video on Instagram @feedinggersasser), checked out the Firehaus,  and had a sleepover.

This Paleo Chunky Summer Slaw is cold and crunchy


Do you get too busy with all the things you need to do that you let meal prep and healthy meal choices fall by the wayside? Then, do you notice that your energy levels or your patience are dropping off? 

 I'm a teacher. This time of year is when my school district has been in session a couple of weeks and I am already feeling the stress of the "list" getting longer and longer. I didn't eat great this week. I certainly didn't get to Crossfit Countdown enough. It's Saturday and I'm about to go back to ONE of my classrooms and work.

Does Roasted Sriracha Lime Zucchini sound good?


Last night was our first Tuesday night Family Dinner with Ger gone. (He's in his second season with the San Francisco Fire and is training hard with his incredible team.)  We had Roasted Lemon Shrimp with Sweet Potatoes and a zucchini/quinoa/cabbage/bonebroth skillet recipe that I haven't posted yet. I did notice that I didn't have the roasted zucchini recipe with sriracha lime sea salt SO I putting that one up now. Salttraders.com is where I get all my favorite sea salt and this one has been added to our favorites list. Updated Paleo Bison Vegetable Soup is serious fuel


I love to have soup made. It's good for days. It's nutritious and filling, and  you have one-bowl clean-up for each person eating. It lends itself well to meal prep and you can tweak it so many different ways. This soup has bone broth, ground bison, and many vegetables that pack a powerful antioxidant punch, like cabbage and onion. 

This organic cabbage was much bigger than my head!

We all need high-protein soups like Andouille Sausage Gumbo


Making soup is a wonderfully easy way to provide meals that increase nutrition and strength but you have to make sure you get lots of protein sources along with all those vegetables. When you feed athletes (and hey, we're all athletes, right?) you need lots of protein.

You are going to love this slow steamed Lemon Basil Salmon


The star of the dinner was Paleo Lemon Basil Steamed Salmon. Check out the recipe here: READ MORE 
It paired well with Buttered Sweet Potatoes with Molasses,  Paleo Broccoli Salad, and Hemp Seed Crusted Avocado.
After all of that, we didn't need dessert. We didn't even cut the watermelon. We talked about our health and wellness. laughed a lot, and played a card game.
What side dishes do you like to have with salmon? If there are leftovers, this salmon looks great in the middle of a salad, so go big when you pick out a slab of salmon and you will have two dinners ready and only one easy cooking session.
